Five Minute Prep

  1. Season & Sear (optional but tasty)
    • Pat chicken dry; sprinkle both sides with salt and pepper.
    • Heat olive oil in skillet over medium high. Brown chicken 2 min per side for golden skin.
  2. Whisk Sauce
    Combine melted butter, garlic, Parmesan, broth, Italian seasoning, paprika, and pepper flakes.
  3. Load Crockpot
    • Scatter potatoes on bottom.
    • Nestle chicken thighs skin side up.
    • Pour sauce evenly; spoon some over potatoes.
  4. Slow Cook
    • LOW 6–7 H or HIGH 3–4 H. Chicken should reach 165 °F and potatoes fork tender.
  5. Crisp & Serve
    • For extra crispy skin, transfer thighs to baking sheet; broil 2–3 min.
    • Stir potatoes in sauce, plate everything, drizzle cooker juices, top with parsley and more Parm.

Season & Sear (Optional)

Pat chicken thighs dry and season with salt and pepper on both sides. In a skillet, heat olive oil over medium - high heat and brown chicken 2 minutes per side to develop golden skin.

Notes

Optional but recommended: broil the chicken thighs for 2–3 minutes at the end for crispy golden skin. Want it creamier? Stir in ¼ cup heavy cream during the last 10 minutes.
